I’m trying to be healthy…well kind of trying ( should try harder), but its a step in the right direction. I started adding salad to some of our weekly meals. Salad is not my favorite thing to eat (though my kids LOVE it). I don’t care for all the crap that goes into it…especially tomatoes! My kind of salad is lettuce…lots of it with a yummy salad dressing.
So if you’re having a salad tonight or some with a steak (fish is great too), try this vinaigrette. You won’t go back to the dressing in a bottle any time soon.
Creamy Mustard Vinaigrette
adapted from Barefoot Contessa Family Style
3 tablespoons champagne vinegar (any other works well too)
1/2 teaspoon Dijon or yellow or spicy mustard (whatever you have on hand)
1/2 teaspoon minced fresh garlic or garlic powder
1 tablespoon mayonnaise
3/4 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/2 cup olive oil
In a small bowl, whisk together the vinegar, mustard, garlic, mayonnaise, salt and pepper. While whisking, slowly the olive oil until the vinaigrette is blended (or emulsified…big word!) and has a creamy look to it.
Toss your greens with enough dressing to moisten and serve immediately.
