One of the most frequently asked questions in my house is “What’s for dinner?”. Its the one question I absolutely hate, cause I don’t always know whats for dinner and I don’t sit around my house all day trying to figure it out either. I try my best to plan meals for the week, but with three little kiddies to watch and plenty of house work to do…it can be tough at times…feels like .
So when I’m having a “what in the world am I’m going to feed my army of men!” moment, I usually turn to my easy Lasagna recipe. Its really easy and doesn’t take much time at all to prepare. You can even make it the night before and heat it up the next day.
The thing I love about this recipe is how you can make it your own. You can add more spices to it, different cheeses or make it without meet and use grilled veggies. Try it for yourself. Its a staple in my house. We love it!

1 lb ground beef or ground turkey
1 egg, beaten
2 1/2 cups shredded Mozzarella Cheese, divided
1 15oz container Ricotta cheese ( I use whole but Part skim is great too)
1/2 cup grated Parmesan cheese, divided
1/4 cup fresh parsley, chopped (dried is fine too)
1 jar (26 oz.) spaghetti sauce or homemade tomato sauce
1/2 to 1 cup water
9 lasagna noodles, uncooked (I use lasagna noodles that have been rolled flat, they cook more evenly)
Preheat oven to 350’F. Brown the meat in a large skillet on medium-high heat. Meanwhile, mix egg, 1 1/4 cups of mozzarella cheese, the ricotta cheese (whole container), 1/4 cup of the parmesan cheese and the parsley until well blended; set aside.
* I don’t always measure out the cheese, I just grab a handful or two of shredded mozzarella and Parmesan and toss in the bowl and mix it with the rest of the ingredients.
Drain meat; return to skillet. Stir in spaghetti sauce. Add water to empty sauce jar; cover with lid and shake well. Add to meat mixture; stir until well blended. Spread 1 cup of the sauce onto bottom 0f 13×9-inch baking dish; top with layers of 3 lasagna noodles, one-third of ricotta cheese mixture and 1 cup of the meat sauce. Repeat layers twice. Top with remaining 3 noodles and remaining meat sauce. Sprinkle with remaining 1 1/4 mozzarella cheese and 1/4 cup of parmesan cheese. Cover with greased foil.
Bake for 45 minutes. Remove foil; bake an additional 15 min or until heated through. Let stand for 5 minutes before cutting to serve.
Makes 12 servings.
