I’m 30 weeks pregnant people…that’s right 30 weeks…10 more weeks of this nonsense to go! As its getting closer to me downloading my cravings have kicked up a bit and I want all sorts of unhealthy food. Last night was sugar cookies with a glass of milk. Sugar cookies? Yes…that’s what I wanted and was willing to stay up all night making them…and so I did…it was heaven!
As I’m typing this I’m eating one right now and its making my belly sing!
These cookies are light, not super sweet and they melt in your mouth (almost). So bake some yourself…eat em’ with a glass of milk and enjoy!
Angel Sugar Cookies
adapted from The Pioneer Woman
Makes a lot of cookies…so you should share them
2 whole Large Eggs
1/2 cup Vegetable Oil
1/2 cup Canola Oil
2 sticks Butter, Softened
1 cup Sugar, Plus Extra For Sprinkling
1 cup Powdered Sugar
1 teaspoon Vanilla Extract
4 cups Plus 2 Tablespoons, All-purpose Flour
1 teaspoon Salt
1 teaspoon Baking Soda
1 teaspoon Cream Of Tartar
Preheat oven to 350 degrees F.
In a large mixing bowl, cream together eggs, oil, butter, sugars, and vanilla.
Add remaining ingredients and mix well. Cover and refrigerate dough for one hour or you can cheat and stick them in the freezer for 30 minutes. The dough can be refrigerated overnight if you don’t want to use the whole batch.
Using a cookie scoop or spoon, drop balls of dough onto an ungreased cookie sheet.
Smear a dab of butter all over the bottom of a glass, then dip the glass in granulated sugar. Use the glass to flatten each ball of dough, dipping again into the sugar each time. Repeat until all are flattened.
Bake for 9 to 11 minutes, until cookies are just barely turning brown. Don’t over brown or you will have some really crispy cookies.
Allow to cool before eating.
