Its taken me a while to want to talk about a raspberry cheesecake I made a month ago. Did it taste bad? No! Not at all…it was really delicious! The only thing that really bugged me was the fact that it had a huge crack down the middle. I’ve made four cheesecakes in my lifetime…including this one. The first one I made had no crack…but the other three…crack…crack…and more crack. Its one thing to look at a plumber’s crack…but a crack in my cheesecake…really annoys me.
I tried a cheesecake recipe out of my Ina Garten cookbook that looked really easy….just took a lot of patience. Ina had claimed in her book that this cheesecake did not crack. I said “no crack?”…”this might be my favorite cheesecake recipe”.
So I went for it. Mixed it. Baked it. Let it sit….and low and behold….

The crack just grew before my eyes…not kidding at all. I called my husband Leche into the kitchen to look at it for himself. He just chuckled at me for being a little crazy about it. He said ” regardless of the crack…it looks and smells really good…stop trippin’…I want a piece…can I have some now?” Not amused…I went on to make the raspberry topping that was going on the cheesecake.
So in the end this cheesecake was really good. It was creamy, had a hint of lemon, and the topping not only hide the crack…it was an added tasty bonus. Would I make this again? Probably…but I’m going to give myself some time…still touchy about this one.
