Yesterday I had some time to try Martha Stewart’s recipe for Coconut Macaroons. I thought it would be nice to give the lovely ladies I hang out with on Thursday nights a sweet little treat they can enjoy without feeling the need to share it with anyone else (especially their crumb-snatchers).
These little macaroons are really easy to make and very yummy. If your looking for something different to give to your mom or other mommies you might know, try these…it will make them smile.

3 large egg whites
1/2 cup sugar
1/4 teaspoon salt
1 package (14ounces) sweetened flaked coconut (5 1/3cups)
1. Preheat oven to 350 degrees. Line baking sheet with parchment paper or coat generously with nonstick cooking spray.
2. In a large bowl, whisk together egg whites, sugar, and salt until frothy. With a fork, stir in coconut until moistened.
3. Drop mixture by packed level tablespoons onto prepared sheet. Bake until lightly golden, 25 to 30 minutes. Cookies will not spread while baking.
4. Be greedy and eat 15 of them and give the rest to your mom.
You still have time… Mother’s Day is very close and I’m sure there are some of you out there that haven’t bought a card for your mom yet. Its ok…I’m a very last minute person myself. Now get to makin’ some macaroons!
