Pie is not something I normally get all crazy about and to make one from scratch…well lets just say…you come to appreciate how special a pie can really be. Growing up I ate pies that came straight from the freezer section at a grocery store. Sarah Lee, Pepridge Farm, you name it…I’ve tried it. One type of pie I like the most is Dutch Apple pie. There’s just something I love about the crumbly topping. So why I decided to make a Lemon Meringue pie from scratch is beyond me.
So lets start with my pie crust. I thought I get all Martha Stewart on myself and make one from scratch. Making it was the easy part…rolling it out and trying to fit it into my pie dish was another story. Lets just say my pie crust had no fancy crimping or pretty look to it. Just kind of threw it in there and trimmed the excess dough off and made some fork imprints around the edge of it. Then I had to bake it…I don’t want to talk about that right now…just happy it even browned.
Now for the lemon filling and the meringue topping. I got this recipe out of my Southern Living Comfort Foods cookbook. It was really easy to follow and my filling and topping came out perfectly.

Assembled my pie, put it in the oven and waited 25 minutes…
Ta-da! Look is a Lemon Meringue Pie! Doesn’t it look pretty for my first pie?
Now I had to let it cool and then put it in the fridge to get cold. Few hours later my pie looked like this…WTH?
Not sure if I was going to eat this at all. What went wrong here? is what I said to myself. But I didn’t want to just throw away something that might look whack, but could possibly taste really good. So I cut myself a slice…took a deep breathe and ate some. To my surprise it tasted really good. Even my pie crust was edible. My husband and I ended up eating two slices.
