Pasta is like music to my belly. I could eat it everyday, cause I love it so so so much! Pasta is easy to make and it has saved me from countless last minute meals. Recently I tried Spaghetti with Cheese + Black Pepper. A recipe I found on Smitten Kitchen.
Funny the day I made this was on a Saturday afternoon, when my kids were acting all kinds of crazy and my husband had asked me 5 times “Hey babe…what’s for lunch?” Not knowing what to do, I remembered that I printed out this recipe. I was pretty apprehensive to try it cause looking at the photo, the dish looked as if it didn’t have any flavor…and in my family we need flavor.
So 15 minutes later as I was doing the second to last part of the recipe I noticed that it said to add 1 cup of reserved pasta water to the ¼ cup of hot olive oil that was in my pot…and to watch for the splattering. I read this part over three times to make sure I wasn’t missin’ something. Thinking to myself “water and hot oil?”…”is this worth burning down my kitchen?”
Not feeling confident at all…I called my husband into the kitchen and asked him to hold a lid to the pot as I added the water to the olive oil. Scared…I added the water and unholy words flew out of my mouth as I watched oil splatter all over the place. My husband almost threw the lid to my pot across the kitchen…and looked at me like I was crazy to do such a thing. Our kids even started screaming as if they heard gunshots go off.
But the splattering was worth it…
The pasta dish was a big hit with us. Surprising enough it had a great flavor and I’ve made it twice now. Not sure how to control the splattering, but I’m working on it. I just make sure I’m wearing an apron and my do-rag (to make sure nothin’ hits my hair). It would really suck when I make this again and some oil hits my hair and I end up with a bald spot…that would really suck….
