Still wondering if I ever made a cake or I should say cupcakes for my baby’s 1st birthday? Well…I did and OMG it was pretty hilarious how all that went down.
After my first disaster with the Buttermilk Cake I found a recipe for Vanilla Cupcakes with Vanilla Buttercream from my favorite blogger Joy, which seemed really easy to make. I did everything according to the recipe. I had high hopes…really high hopes. Then I got an idea…”Hmm..the recipe says it makes 12 cupcakes. Why don’t I just make 6 really big cupcakes” So I went ahead with my great idea and spooned my tasty batter into 6 really big cupcakes molds.
As I’m playing with my son on the floor in the kitchen, I look in my oven and see that my cupcakes are rising to perfection. Excited, I continue playing with my baby. Twenty minutes later I look in my oven again and gasp…no… pretty much drop an F-bomb (sorry mom) and immediately take out the cupcakes. Below is the madness I created… yet again
My bright idea was not so bright after all. I almost gave up, but couldn’t, I really wanted to get this right. So I made the cupcakes again, doing it the right way this time (using a 12 cup mold) and 25 minutes later…
They were edible and pretty tasty. Even the frosting was good. Happy with the result we were able to enjoy these for my baby’s 1st birthday. I felt proud of myself for not giving up.
Even though these cupcakes turned out good…ok maybe alright… I’m really over the cake from scratch crap…really over it…give me a few weeks…I’ll come around.
