So what do you do with your last two bananas and some day old french bread?
Make some Banana Bread Pudding!
Don’t worry its not the mushy weird kind that some restaurants offer. It tastes like french toast with bananas in it. Makes a great brunch meal.

The only issue I had with this recipe was that it seemed to be missing something. Maybe some homemade caramel sauce, a dollop of ice cream…it just needed a little more excitement.

Banana Bread Pudding
adapted from Evil Shenanigans
4 tablespoons butter, melted
2 cups whole milk (2% is ok)
1/2 cup dark brown sugar
2 eggs
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/4 teaspoon salt
2 teaspoons vanilla extract
6 cups cubed day old French bread
2 bananas, sliced
2 tablespoons sugar
Make
Preheat your oven to 350′F degrees and spray a medium sized casserole dish with nonstick spray.
In a large bowl whisk together the butter, milk, brown sugar, eggs, cinnamon, nutmeg, salt, and vanilla. Mix well.
Add the cubed bread and fold to coat. Make sure all the bread is coated in the custard mixture. Let stand for five minutes. Fold in the sliced bananas.
Pour the mixture into the prepared dish and evenly sprinkle the two tablespoons of sugar over the top. Bake for 40 to 45 minutes, or until golden brown and puffed all over. Allow to stand for thirty minutes before serving.
This dish is best when eaten the same day. I would not recommend trying to store it in the fridge and eating it the next day…unless you like eating brown soggy bananas.
